An easy to assemble stir-fry using fresh pineapple with a pineapple juice and soy sauce.  Stir-frys are easy to make and provide a wonderful opportunity to include vegetables and fruits. Stir-frys are useful when trying to accommodate people with special diets as often they are egg-free, dairy, lactose and nut free. By using gluten-free cornflour and soy sauce can also be tolerated by people with a gluten intolerance.
