Quick and simple to make, with added calcium and toasted pine nuts

Instructions
  1. Preheat oven 180 degrees and spray a muffin pan with oil
  2. In a bowl combine, eggs, vegetable stock power and milk and mix together
  3. Add in spinach, fetta cheese and pine nuts (leave some pine nuts to top quiche)
  4. Spoon mixture into prepared muffin pan (3/4 full) and cook in the oven for about 25 minutes until firm and golden brown
